Diaselo location, limestone soil naturally reinforced with silicate clay
Vinification
Harvest very early in the morning and transport to the winery by refrigerated truck. Cold extraction for 8 hours at a temperature ≤ 5℃. Controlled fermentation temperature 12-14℃ and battonage at the end of fermentation for at least 1 month. Native yeasts
Maturation
4 months aging in French and American oak barrels

CHARACTERISTICS

Bright white color with golden highlights, rich and oily in the mouth. Flint and earthy aromas with subtle hints of lemon blossom, citrus, apricots and green apple, combined with sweet notes from its stay in oak. A well-structured, robust and gastronomic Assyrtiko, with intense acidity, complex character and a noticeable touch of oak.
